I, for one, love to be able to order chicken enchiladas with my 2 over-easy eggs for breakfast. At Colin’s Cantina I can do just that or I can order Lolo’s Pancakes or Terry’s French Toast, among other choices, as long as I get there on Thursday through Monday when they open at 8am and serve breakfast. Tuesday and Wednesday they open at NOON, so no breakfast offered those two days but plenty of casual comfort food from their extensive menu.

On our first visit we ordered guacamole (excellent!) to start our meal, and the Rocky Point Shrimp Cocktail (huge). Next time will try Mark’s Nachos Supreme or Clifton’s Mexican Sampler. We had ice cold beer and house brewed iced tea, then we ordered our meals. I chose two dishes (yes, I did!). I had Kent’s Cheeseburger and Bev’s Fish and Chips (Bev said this meal was named after her and hubby, Chip). My burger was served as I want a burger to be with fresh tomato, onion slice, crisp lettuce, and pickle slices. The cheese was melted on the burger and Sulema brought me catsup, and mayo cold from the fridge, Perfect!

Mario had a burger, also but he chose Randy’s BBQ/Onion Ring Cheeseburger, and Alicia opted for a variation of the Sizzling Chicken Fajitas. We were all very happy with our choices. We gobbled down everything, and then came the Choco-flan. We shared dessert, and lastly we each had an after meal palate cleansing Big “O” shot, which was Baileys, Kahlua, with Amaretto, and it was delish!

Colin’s is right at the entrance to the Princesa de Peñasco Condominium Resort on Sandy Beach (ask security at the guard gate to point it out), there is plenty of parking, regular and handicap, and the sidewalk and entrance are wheelchair friendly. Inside there is a horseshoe bar with seating all there sides, along with the table and chairs where we sat next to the tall arched window. Plenty of outside seating too, and we noticed while we were there that many happy “pool people” came in to place their lunch orders, which were then delivered to them at the outside tables by Abraham.

My burger was so good on our first trip that I had to go back with Barbara I. the very next week to try the chicken burger with grilled hatch chile. Another excellent choice. Check them out! Call me, I’ll go with you!
