Hi there everyone, this is your friend and chef, Mickey, with another recipe and a good one if I may say so! This month we will offer a great Puerto Rican recipe…Pollo Con Arroz (chicken with rice). I promise you will enjoy this one. Let’s do this!


Okay we will need the following ingredients

1 chicken (appx 4 lbs)

salt and freshly ground pepper

4 tablespoons vegetable oil

1 large green pepper, diced

4 small green chiles

2 tablespoons fresh cilantro leaves chopped

1 small onion chopped

2 cloves garlic, minced

1 teaspoon paprika

1/4 teaspoon saffron

1 bay leaf

1/2 teaspoon dried oregano

4 cups chicken stock

2 cups crushed tomatoes

1 cup uncooked rice

3 pimentos chopped

3/4 cup cooked peas

Season the chicken pieces with salt and pepper, heat the oil in a large pot over medium-high heat and brown chicken pieces on all sides. Transfer chicken to a platter. Reduce pot heat to medium heat, and cook green peppers, onion, chiles, and garlic for 10 minutes. Add tomatoes, chicken stock, herbs and saffron then return chicken to the pot. Bring to simmer, add rice and cover. Cook for 20 to 25 minutes – until rice is tender. Add pimientos and continue to cook for 5 minutes long. Finally add the cooked peas.
